No Grill Needed...Tomato, Watermelon, and Basil Skewers
1/4 cup balsamic vinegar
1/4 cup sugar
1/4 cup sugar
- 1 (4 to 5 pound) watermelon, cut into 32 (1 1/2-inch cubes
- 32 small basil leaves (or torn larger leaves)
- 16 cherry tomatoes, halved
- 2 tablespoons extra-virgin olive oil
- Kosher salt
- Special equipment: 16 (6-inch) skewers
Directions
Combine the balsamic vinegar and sugar in a small saucepan over medium heat. Bring to a simmer, stirring occasionally, until the sugar is dissolved. Turn off the heat and set aside to cool.
Starting with the watermelon squares, push the watermelon to the very tip of the skewer. Then skewer a basil leaf, then a tomato half. Continue with another watermelon, basil leaf, and tomato half. Place the skewer on a serving platter so it stands upright, using the lowest watermelon square as a base. Continue with the remaining skewers.
Drizzle the skewers with the reserved balsamic syrup and the olive oil. Sprinkle with coarse salt. Serve.

BANDERA'S Restaurant Coleslaw Recipe....its time to BBQ
I fell in love with this Coleslaw when I visited Chicago's Magnificent Mile and my taste buds just had to find the recipe! This IS as close as I could get...it's great with any barbecue and on fish taco's....ENJOY~ Letha
Ingredients
- ½ head green cabbage, sliced in thin strips
- ¼ head purple cabbage, sliced in thin strips
- ½ jicama sliced, in thin strips
- 2 green onions, finely chopped
- ¼ cup fresh cilantro or parsley, coarsely chopped (depending on your preference)
- ¼ to 1/2 cup roasted peanuts
- Mix all above ingredients then add the vinaigrette below
- FOR THE VINAIGRETTE:
- Add the following ingredients to a small food processor (Cuisinart Mini-Prep) and grind it up. Try to let sit in the refrigerator for at least one hour.
- ½ cup peanut oil if peanut flavor is strong (If peanut oil is not strong in flavor then add 1/4 cup roasted peanuts to the vinaigrette mix - DO NOT use sesame oil.)
- Juice of 1/2 lime or 1/4 lemon
- 2 tablespoons rice vinegar
- ½ teaspoon fresh minced ginger
- 1 tablespoon sugar
- 1 green onion
- ¼ cup chopped cilantro or parsley, depending on your preference
- ½ teaspoon salt
Directions
Mix salad ingredients then toss with vinaigrette.

Mo Says...It may be time to LEAVE Chemicals ALONE
Irreconcilable Differences
Clients who have successfully cherished using hair chemicals are puzzled as to where the problems began, but notice their relationship has been in major turmoil for a while. Chalk it up to Irreconcilable Differences and here are 3 signs that you may have to leave the chemicals alone.

Letha's | Watermelon Salad with Mint and Lime Dressing
Ingredients
1 (5- to 6-pound) ripe seedless watermelon (8 to 10 cups), cut into bite-size pieces
Sea salts, to taste
1/4 cup(s) fresh lime juice (about 2 limes)
1/2 cup(s) mint chiffonade
1/2 cup(s) crumbled feta (optional)
- In a bowl, toss together all ingredients except cheese. Chill until a few minutes before serving; then sprinkle with feta, if desired. Serve immediately.
Take it along on a Wind-Down-Wednesday in the Park!
